Green Bean Baby Puree
Fresh green beans steamed very tender in the Varoma and blended into a smooth, mild puree for babies.
Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Green beans make a mild, gently savory puree, a nice change from the sweeter first foods. They need to be steamed until very tender, well past the crisp stage you would serve at dinner, so they blend smooth. There is no salt, sugar or honey in this puree, only green beans and some of their cooking water.
The Thermomix® TM7™ steams the beans in the Varoma over water, then blends them twice, first gradually and then at full speed, to break down the fibers. For the very first spoonfuls, press the puree through a fine sieve. The color comes out a soft olive green, which is completely normal.

Instructions
- Place the water in the mixing bowl. Spread the green beans in the Varoma dish and close the Varoma lid.
- Remove the measuring cup, place the Varoma in position and steam 30 min/Varoma/speed 1, until the beans are very tender and squash easily between your fingers.
- Set the Varoma aside, pour the cooking water into a jug and save it.
- Place the green beans and 120 g (1/2 cup) of the saved cooking water in the mixing bowl. With the measuring cup in place, blend 1 min/speed 5-10, increasing speed gradually.
- Scrape down the sides with the spatula and blend 1 min/speed 10, until very smooth. Add more cooking water, 1 tbsp at a time, if it is too thick.
- For the smoothest first puree, press it through a fine mesh sieve with the back of a spoon to hold back any fibers.
- Let the puree cool until lukewarm, check the temperature on the inside of your wrist and serve a small portion in a bowl.
Tips
- Ask your pediatrician before starting solids and about the right texture for your baby's age. First purees are usually very smooth and thin; as your baby grows, skip the sieve and blend less, and later offer soft, well-cooked green beans cut small.
- Keep the puree covered in the fridge up to 2 days, or freeze it in an ice cube tray, then move the cubes to a freezer bag and use them within 2 months. Thaw in the fridge overnight.
- Frozen cut green beans work too, with no trimming: steam them 25 minutes from frozen.
- Serve from a small bowl, not from the storage jar, and throw away what your baby does not finish.
