Calabaza and Sweet Plantain Baby Puree
Calabaza and ripe plantain, steamed and blended into a golden puree with a Puerto Rican accent. No sugar.
Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Calabaza and plátano maduro are two of the most familiar flavors in a Puerto Rican kitchen, and together they make a golden, naturally sweet puree for babies. The plantain should be very ripe, yellow with plenty of black spots, so it is soft and sweet once cooked. There is no salt, sugar or honey in it.
The Thermomix® TM7™ steams the calabaza and plantain in the Varoma, then blends them with a little of the steaming water until smooth. Look for calabaza (West Indian pumpkin) at Sedano's or the Latin aisle of Publix and Walmart; butternut squash works just as well.

Instructions
- Place the water in the mixing bowl.
- Spread the calabaza and plantain in the Varoma dish in an even layer. Close the Varoma, set it in position and steam 25 min/Varoma/speed 1.
- Check that a knife slides easily into the calabaza and the plantain. If not, steam 5 min/Varoma/speed 1 more.
- Set the Varoma aside and pour the steaming water into a measuring cup. Save it.
- Place the calabaza, plantain and 80 g (1/3 cup) of the saved water in the mixing bowl. With the measuring cup in place, blend 1 min/speed 5-10, increasing speed gradually, until smooth. Add more water, 1 tablespoon at a time, if needed.
- Let it cool until lukewarm. Stir well, check the temperature on the inside of your wrist and serve a small portion in a bowl.
Tips
- Ask your pediatrician before starting solids and before adding new foods. Begin with a smooth, thin puree; as your baby grows, blend for less time so it stays thicker, and later mash the cooked calabaza and plantain with a fork.
- Do not add salt, sugar or honey. A ripe plantain is already sweet, and green or barely yellow plantains will not blend smooth.
- Keep it covered in the refrigerator up to 3 days, or freeze it in an ice cube tray and use the cubes within 3 months.
- When your pediatrician says your baby can have more variety, try mixing a cube of this puree with a cube of the chicken and vegetable puree.
