Tropical Green Smoothie

Spinach, pineapple, mango and banana blended with coconut water into a bright, creamy smoothie.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Two tall glasses of bright green smoothie with pineapple wedges on the rims.

This is the green smoothie for anyone who is not sure about green smoothies. Pineapple and mango lead the way, banana makes it creamy, and coconut water keeps it light. The spinach brings the color, and that is about all you will notice of it.

The trick is the order. The Thermomix® TM7™ blends the spinach with the coconut water first, so the leaves break down completely before the fruit goes in. Then frozen mango and pineapple make it thick and cold, so you need little or no ice.

Ingredients

Instructions

  1. Place the coconut water and spinach in the mixing bowl.
  2. Insert the measuring cup and blend 20 sec/speed 8, until no pieces of leaf remain.
  3. Add the pineapple, mango, banana and lime juice, plus the ice if most of your fruit is fresh.
  4. Insert the measuring cup and blend 1 min/speed 5-10, increasing speed gradually.
  5. If it is too thick, add 50 g more coconut water and blend 10 sec/speed 8.
  6. Pour into glasses and serve right away.

Tips

  • Freeze the pineapple, mango and banana in portions in freezer bags, and leave out the ice when you use them.
  • For a creamier smoothie, swap the coconut water for milk, or for plain yogurt thinned with a little water. Baby kale works in place of the spinach: pull off any thick stems.
  • It is best fresh. If you have some left, keep it in a closed jar in the fridge for up to 1 day and shake it before drinking, because it separates.
