Fluffy pancakes made with ripe bananas and oats you mill right in the mixing bowl.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

A stack of golden banana oat pancakes topped with banana slices and maple syrup.

Those spotty bananas on the counter are about to become breakfast. These pancakes start with old-fashioned rolled oats, which the Thermomix® TM7™ mills into a fine flour right in the mixing bowl, so you can skip buying a separate bag of oat flour.

The bananas go in next with milk, eggs, a little cinnamon and vanilla. A short mix turns it all into a smooth, thick batter. Let it rest for five minutes while the griddle heats: the oats soak up some of the milk, and the pancakes come out tender and fluffy.

The riper the bananas, the sweeter the pancakes, so the honey is up to you. Serve them warm with sliced banana and a drizzle of maple syrup, and save a few for another morning: they freeze well and reheat in the toaster in minutes.

Instructions

  1. Place the oats in the mixing bowl and mill 20 sec/speed 9 until fine.
  2. Add the bananas, milk, eggs, honey, baking powder, vanilla, cinnamon and salt, then mix 20 sec/speed 5.
  3. Scrape down the sides of the mixing bowl with the spatula and mix 5 sec/speed 4 more.
  4. Let the batter rest for 5 minutes while you heat a griddle or large nonstick skillet over medium-low heat.
  5. Brush the griddle with a little butter and pour 60 g of batter (1/4 cup) for each pancake.
  6. Cook 2-3 minutes, until bubbles appear on top and the edges look set, then flip and cook 1-2 minutes more, until golden.
  7. Repeat with the rest of the batter, brushing the griddle with butter between batches.
  8. Serve warm with banana slices and maple syrup.

Tips

  • Make ahead: the batter keeps covered in the fridge for up to 1 day. It thickens overnight, so stir in a splash of milk before cooking.
  • To freeze, cool the pancakes on a rack, stack them with parchment paper in between and freeze in a bag for up to 2 months. Reheat them in the toaster.
  • Any milk works here, including almond or oat milk. For a treat, scatter a few blueberries or chocolate chips over each pancake right after you pour it.
