Huevos Rancheros

Crisp corn tortillas with refried beans, fried eggs and a chunky ranchera salsa, finished with avocado and queso fresco.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Two crisp corn tostadas with refried beans, red ranchera salsa, sunny-side-up eggs, avocado slices, crumbled queso fresco and cilantro.

Huevos rancheros started as the hearty breakfast served on Mexican ranches: fried eggs on corn tortillas, covered in a warm tomato and chile salsa. Today you find them on breakfast menus everywhere, usually with a layer of refried beans underneath and avocado and crumbled cheese on top. Runny yolk and salsa together are the whole point.

The Thermomix® TM7™ makes both bases: creamy refried beans from canned pintos, and a chunky salsa ranchera of tomato, onion, garlic and jalapeño. While they wait, you crisp the tortillas and fry the eggs on the stove. It is a weekend breakfast that also works as a quick dinner.

Instructions

  1. Place the onion and garlic in the mixing bowl and chop 3 sec/speed 5. Add the lard and sauté 3 min/120°C (250°F)/speed 1.
  2. Add the beans, the 100 g can liquid, salt and cumin and cook 5 min/100°C (212°F)/speed 1. Now blend the beans 20 sec/speed 4, until creamy with some texture. Transfer to a small saucepan, cover and keep warm on the stove over low heat. Rinse the mixing bowl.
  3. Place the tomatoes, onion, garlic and jalapeño in the mixing bowl and chop 4 sec/speed 5.
  4. Add the oil, salt and oregano. Place the simmering basket on the mixing bowl lid instead of the measuring cup and cook 12 min/100°C (212°F)/reverse/speed 1, until the salsa is thick and chunky.
  5. Meanwhile, heat 1 cm (1/2 in) of oil in a skillet on the stove to 180°C (360°F). Fry the tortillas one at a time for 30 to 45 seconds per side, until crisp like tostadas. Drain on paper towels.
  6. In a nonstick skillet on the stove, fry the eggs in a little oil over medium heat for 3 to 4 minutes, until the whites are set and the yolks are still runny.
  7. Spread each tortilla with beans, top with a fried egg and spoon salsa around it. Finish with avocado, queso fresco and cilantro and serve right away.

Tips

  • Prefer soft tortillas? Warm them for 10 seconds per side in a little oil instead of frying them crisp, as many home cooks do.
  • The beans and salsa keep 4 days in the fridge, so you can make them the day before and only fry the tortillas and eggs in the morning.
  • Huevos divorciados: top one egg with salsa ranchera and the other with salsa verde, with the beans down the middle.
  • Black beans work too: use canned black beans instead of pintos.
