Classic Margarita on the Rocks

Tequila, fresh lime juice and orange liqueur over ice, in a glass rimmed with homemade lime salt.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

A margarita on the rocks in a salt-rimmed glass with a lime wheel, next to limes and a small bowl of coarse salt.

The margarita is the best-known tequila cocktail in the world, and the classic recipe is short: blanco tequila, fresh lime juice and orange liqueur, poured over ice in a glass with a salted rim. A spoonful of agave syrup rounds off the sour edge. Freshly squeezed limes make all the difference, so skip the bottled mix.

The Thermomix® TM7™ helps twice. First it chops strips of lime zest into coarse salt, for a rim that smells like fresh lime. Then it mixes the drinks with ice on reverse, which chills and dilutes them just like a cocktail shaker, four glasses at once. Pour, add a lime wheel and serve.

Instructions

  1. Place the salt and the lime zest strips in the mixing bowl and chop 10 sec/speed 7. Spread the lime salt on a small plate and let it dry for 10 minutes.
  2. Run the lime wedge around the rims of 4 glasses and dip them in the lime salt. Fill the glasses with fresh ice.
  3. Wipe out the mixing bowl. Weigh in the tequila, lime juice, orange liqueur and agave syrup, then add the 250 g of ice.
  4. Mix 15 sec/reverse/speed 3, to chill the drinks without crushing the ice.
  5. Insert the simmering basket in the mixing bowl and hold it in place with the spatula while you pour the margaritas into the glasses, so the ice stays behind.
  6. Garnish each glass with a lime wheel and serve right away.

Tips

  • Frozen margaritas: put the tequila, lime juice, orange liqueur, agave and 400 g of ice (about 2 1/2 cups) in the mixing bowl and blend 1 min/speed 5-10, increasing speed gradually.
  • Alcohol-free: skip the tequila and orange liqueur, mix the lime juice and agave with 120 g fresh orange juice (1/2 cup), pour over ice and top each glass with sparkling water.
  • Keep the leftover lime salt in a jar. It is also good on fruit, cucumber and the rim of a michelada glass.
  • For adults 21 and over.
