Coquito (Puerto Rican Coconut Holiday Drink)
Creamy coconut, cinnamon and rum holiday drink, Puerto Rico's answer to eggnog. Served cold in small glasses.
Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Coquito is the drink of Puerto Rican Christmas: a creamy blend of coconut, sweet milks, cinnamon and rum, served cold in small glasses and shared in bottles with neighbors, coworkers and family from December to Three Kings Day. Every family guards its own recipe. This one has no eggs and a gentle spice from cinnamon, star anise and cloves.
The Thermomix® TM7™ warms the coconut and evaporated milks with the whole spices in the simmering basket, so they infuse without leaving bits behind, then mixes in the cream of coconut and condensed milk. Once it cools, the rum goes in and the coquito rests in the fridge so the flavors blend.

Instructions
- Place the cinnamon sticks, star anise and cloves in the simmering basket. Insert the basket into the mixing bowl, add the coconut milk and evaporated milk and cook 10 min/90°C (195°F)/speed 1.
- Lift out the simmering basket with the spatula. Discard the spices, or rinse the cinnamon sticks and save them to decorate the bottles.
- Add the cream of coconut, condensed milk, vanilla, ground cinnamon, nutmeg and salt. With the measuring cup in place, mix 30 sec/speed 4.
- Let the mixture cool in the bowl to room temperature, about 30 minutes.
- Add the rum and mix 10 sec/speed 3.
- Pour the coquito into glass bottles with a funnel, close them and refrigerate at least 4 hours, ideally overnight.
- Shake well and serve cold in small glasses, with a pinch of ground cinnamon on top.
Tips
- Store coquito in closed glass bottles in the fridge for up to 3 weeks. The coconut fat thickens as it chills, so shake the bottle well and let it sit a few minutes before pouring.
- Coquito makes a lovely holiday gift: pour it into small bottles and tie a cinnamon stick to each one.
- Alcohol-free: leave out the rum and add 240 g (1 cup) more whole milk or coconut milk, so everyone at the party can have a glass.
- For adults 21 and over.
