Bright, fresh lemonade made from whole lemons, peel and all, in about 10 minutes.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

A glass pitcher of pale yellow lemonade with ice, lemon slices and mint.

This lemonade uses the whole lemon, not just the juice. The peel holds most of the lemon's fragrant oils, so blending the fruit with sugar and water gives you a lemonade that smells as fresh as it tastes, and you skip the squeezing.

The secret is a short blend. Just 10 seconds in the Thermomix® TM7™ is enough to release the flavor from the peel, and stopping there keeps the white pith from turning the drink bitter. Strain out the pulp, add cold water and ice, and the pitcher is ready.

Choose lemons with smooth, thin skin, and give them a good scrub, since the peel goes in too. After you add the cold water, taste and adjust: a little more sugar if you like it sweeter, a splash more water if you like it milder.

Instructions

  1. Scrub the lemons under running water, trim off both ends and cut them into quarters, picking out any seeds you see.
  2. Place the lemons, sugar and 500 g cold water in the mixing bowl.
  3. Insert the measuring cup and blend 10 sec/speed 8. Do not blend longer, or the white pith will make it bitter.
  4. Pour through a fine mesh strainer set over a large pitcher, pressing the pulp with the spatula to get all the juice out.
  5. Add the 1000 g cold water to the pitcher and stir until the sugar dissolves.
  6. Taste and adjust with a little more sugar or water.
  7. Serve over ice with lemon slices and mint.

Tips

  • For an extra mild lemonade, peel one of the lemons before you quarter it, and always keep the blend short.
  • For a sparkling version, finish with 1000 g cold sparkling water instead of still water and stir gently.
  • Keep it covered in the fridge for up to 2 days. The peel flavor gets stronger as it sits, so it is at its best the day you make it.
