S'mores with Homemade Graham Crackers

Toasted marshmallow and melting chocolate between crisp homemade graham crackers, campfire style.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

S'mores with toasted marshmallows and milk chocolate between square graham crackers on a wooden board, with a fire pit behind.

S'mores are the campfire treat every American kid knows: a marshmallow toasted until golden and gooey, pressed with a square of chocolate between two graham crackers, so good you always want some more. Making the graham crackers yourself turns a simple snack into something special, with honey, brown sugar, cinnamon and a toasty whole wheat flavor.

The Thermomix® TM7™ makes the cracker dough in less than a minute: it cuts the butter into the flours and brings everything together with honey and milk. Roll it thin between sheets of parchment, chill, cut and bake. Then toast the marshmallows over a fire pit, a grill or a gas burner and build your s'mores.

Instructions

  1. Place both flours, the brown sugar, cinnamon, baking soda, salt and cold butter in the mixing bowl and chop 10 sec/speed 6, until it looks like fine crumbs.
  2. Add the honey, milk and vanilla and mix 20 sec/speed 4, until the dough clumps together. Divide it in half.
  3. Roll each half between 2 sheets of parchment paper into a rectangle about 3 mm (1/8 in) thick. Slide them onto baking sheets, still in the paper, and refrigerate for 30 minutes.
  4. Preheat the oven to 180°C (350°F). Peel off the top sheets of parchment, cut the dough into 6 cm (2 1/2 in) squares with a knife or pizza cutter, prick each square a few times with a fork and pull the squares slightly apart.
  5. Bake for 12 to 15 minutes, turning the sheets halfway through, until golden brown at the edges. Recut the lines while warm and let the crackers cool on the sheets: they crisp as they cool.
  6. Thread the marshmallows onto long skewers and toast them over a campfire, charcoal grill or the flame of a gas burner, turning slowly, until golden outside and soft inside.
  7. Place a square of chocolate on a graham cracker, add a hot marshmallow, press a second cracker on top and slide out the skewer. Wait 30 seconds for the chocolate to melt, then eat.

Tips

  • No fire? Set the crackers with chocolate and a marshmallow on a baking sheet and broil them in the oven for 1 to 2 minutes, watching closely, then top with the second cracker.
  • Keep an adult in charge of the fire and the skewers, and let toasted marshmallows cool for a moment before little ones bite in: the inside gets very hot.
  • The graham crackers keep 1 week in an airtight container. They are also great on their own or crushed for a pie crust.
