Southern Banana Pudding
Layers of homemade vanilla pudding, ripe bananas and soft cookies, topped with whipped cream.
Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Banana pudding is a staple of Southern potlucks, church suppers and family reunions: layers of creamy vanilla pudding, sliced ripe bananas and vanilla wafer cookies that soften overnight into something close to cake. It is usually built in a big glass dish so everyone can see the layers, and it feeds a crowd.
The Thermomix® TM7™ cooks the pudding from scratch, with milk, egg yolks and cornstarch stirred the whole time at 90°C (195°F), so it turns thick and smooth without a single lump. Let it chill with the bananas and cookies for at least 4 hours, and whip the cream just before serving.

Instructions
- Place the milk, sugar, cornstarch, egg yolks and salt in the mixing bowl and cook 10 min/90°C (195°F)/speed 4, until thick. If it is still thin, cook 2 min/90°C (195°F)/speed 4 more.
- Add the butter and vanilla and mix 20 sec/speed 4. Pour the pudding into a bowl, press plastic wrap onto the surface and let it cool for 30 minutes.
- In a 3 L (3 qt) trifle bowl or glass dish, make a layer of cookies, then a layer of banana slices, then a third of the pudding. Repeat twice, ending with pudding.
- Cover and refrigerate for at least 4 hours, or overnight, so the cookies soften.
- Just before serving, wash and dry the mixing bowl well. Insert the butterfly whisk, add the cold cream, powdered sugar and vanilla, remove the measuring cup and whip 1-2 min/speed 3.5, watching through the lid opening, until soft peaks form.
- Pipe or spread the whipped cream over the pudding and decorate with a few whole cookies and some crumbs.
Tips
- Slice the bananas right before you layer them and cover them completely with pudding, so they do not turn brown.
- Vanilla wafers are the classic choice and turn soft and cakey; graham crackers add a light honey flavor and keep a bit more bite.
- Banana pudding is best within 2 days. Keep it covered in the fridge.
