Rainbow Cabbage Slaw with Lime Dressing
Crunchy red and green cabbage, carrot and bell pepper slaw tossed in a bright lime and cilantro dressing.
Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

This slaw is all color and crunch: purple and green cabbage, sweet carrot and red and yellow bell pepper, tossed in a tangy lime dressing with cilantro and a touch of honey. There is no mayonnaise, so it stays fresh and bright next to grilled chicken, fish tacos or a plate of rice and beans.
The Thermomix® TM7™ makes the dressing first, then chops the vegetables in two quick batches on reverse. On reverse the blades chop more gently, and short bursts keep every piece crunchy instead of watery. Check after each burst and stop as soon as the pieces look the way you like them.

Instructions
- Place the cilantro and garlic in the mixing bowl and chop 3 sec/speed 7. Scrape down the sides of the bowl with the spatula.
- Add the lime juice, olive oil, honey, salt and pepper and mix 10 sec/speed 3. Pour the dressing into a large salad bowl. There is no need to wash the mixing bowl.
- Place the red cabbage and carrot in the mixing bowl and chop 3 sec/reverse/speed 5. Check the size: if there are still big pieces, chop 1-2 sec/reverse/speed 5 more. Add to the salad bowl.
- Place the green cabbage and both bell peppers in the mixing bowl and chop 3 sec/reverse/speed 5, checking the same way. Add to the salad bowl.
- Add the green onions and toss everything well with the dressing.
- Serve right away for the most crunch, or chill up to 2 hours so the flavors come together.
Tips
- Leftovers keep 1 day in the fridge. The slaw softens a little and the red cabbage tints everything pink, but it still tastes great in tacos.
- Want it creamier? Add 60 g plain Greek yogurt (1/4 cup) to the dressing in step 2.
- Make it a main dish with a can of drained black beans and a diced avocado, or pile it on fish tacos and pulled pork sandwiches.
- Out of limes? Lemon works too, and agave syrup can replace the honey.
