Hot Fudge Sundae

Vanilla ice cream with thick homemade hot fudge, whipped cream, chopped peanuts and a cherry on top.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

A hot fudge sundae in a tall glass with vanilla ice cream, chocolate sauce, whipped cream, chopped peanuts and a cherry.

The hot fudge sundae is the star of the old-fashioned American ice cream parlor: scoops of vanilla ice cream in a tall glass, warm fudge sauce running down the sides, a cloud of whipped cream, chopped peanuts and a bright red cherry. Homemade hot fudge is thick, glossy and deeply chocolatey, and it firms up a little as it hits the cold ice cream.

The Thermomix® TM7™ does all three toppings in one session: it chops the peanuts, whips the cream, and then cooks the cream, sugar, cocoa and chocolate into fudge sauce while you set out the glasses. You will have extra fudge for another night.

Instructions

  1. Place the peanuts in the mixing bowl and chop 2 sec/speed 4. Transfer to a small bowl. Put 4 sundae glasses in the freezer.
  2. Wipe out the mixing bowl. Insert the butterfly whisk, add the cold cream, powdered sugar and vanilla, remove the measuring cup and whip 1-2 min/speed 3.5, watching through the lid opening, until soft peaks form. Refrigerate the whipped cream.
  3. Rinse and dry the mixing bowl. Place the chocolate in it and chop 10 sec/speed 7.
  4. Add the cream, corn syrup, brown sugar, cocoa and salt and cook 8 min/100°C (212°F)/speed 2, until smooth and slightly thickened.
  5. Add the butter and vanilla and mix 20 sec/speed 3. Let the fudge cool for 5 minutes, so it is thick and warm but not hot.
  6. In each glass, spoon a little fudge, add 2 scoops of ice cream, more fudge and 1 more scoop. Finish with more fudge, a swirl of whipped cream, chopped peanuts and a cherry. Serve right away.

Tips

  • Keep the extra fudge in a jar in the fridge for up to 2 weeks. Warm it in the microwave in 15 second bursts, stirring in between.
  • Use a scoop dipped in hot water for neat, round scoops of ice cream.
  • Swap the peanuts for chopped pecans or walnuts, or add sliced banana for a banana split style sundae.
