Ham and Cheese Sliders

Soft, sweet homemade rolls filled with ham and melted Swiss, baked under a butter, mustard and poppy seed glaze.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

A baking pan of golden sweet roll sliders filled with ham and melted Swiss, glazed with butter, mustard and poppy seeds, with one pulled apart.

Ham and cheese sliders are the party sandwich that feeds a crowd from a single pan: a slab of soft, slightly sweet rolls, filled with ham and Swiss cheese, then baked under a glossy glaze of butter, mustard and poppy seeds until the cheese melts. Pull them apart and serve them warm.

The Thermomix® TM7™ warms the milk and pineapple juice, kneads a soft, sweet roll dough and later melts the glaze in a few minutes. The rolls need time to rise, so bake them in the morning or the day before. If you are in a hurry, store-bought sweet rolls work too (see the tips).

Instructions

  1. Place the milk, pineapple juice, sugar, butter and yeast in the mixing bowl and warm 3 min/37°C (98°F)/speed 2.
  2. Add the egg, flour and salt and knead 3 min/dough mode. The dough should be soft and slightly tacky. Shape it into a ball, place it in a greased bowl, cover and let it rise in a warm spot for about 1 hour, until doubled.
  3. Grease a 23 x 33 cm (9 x 13 in) baking pan. Divide the dough into 12 pieces (about 75 g each), roll them into smooth balls and set them in the pan in 3 rows of 4. Cover and let rise 30 to 45 minutes, until puffy and touching. Preheat the oven to 180°C (350°F).
  4. Brush the rolls with the beaten egg and bake in the oven for 18 to 22 minutes, until golden. Let them cool in the pan for 15 minutes, then lift the whole slab out onto a board.
  5. Place the butter, both mustards, Worcestershire, brown sugar, poppy seeds and dried onion in the mixing bowl and melt 3 min/80°C (175°F)/speed 2.
  6. With a long serrated knife, slice the slab of rolls in half horizontally, keeping it in one piece. Set the bottom half back in the pan, layer the ham and Swiss cheese over it and cover with the top half.
  7. Brush and drizzle the glaze over the tops so some runs between the rolls. Cover the pan with foil and bake in the oven at 180°C (350°F) for 15 minutes.
  8. Uncover and bake 5 to 8 minutes more, until the cheese is melted and the tops are glossy and golden. Cut along the lines of the rolls and serve warm.

Tips

  • Short on time? Use a 12-count package of store-bought sweet rolls and start at step 5.
  • Make ahead: fill the rolls, pour on the glaze, cover and refrigerate up to 24 hours. Bake covered for 20 minutes, then uncovered for 5 to 8 minutes.
  • Swap the Swiss for provolone or sharp cheddar, or the ham for sliced turkey.
