Cheesy Garlic Bread
Crusty Italian bread with parsley garlic butter and melted, golden mozzarella, straight from the oven.
Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Cheesy garlic bread is the side that makes any pasta night feel special: a crusty Italian loaf spread with garlic butter right to the edges, then covered with mozzarella that melts and browns in spots in the hot oven. It is just as good next to a bowl of soup or a salad.
The Thermomix® TM7™ grates the Parmesan, chops the garlic and parsley and blends them into soft butter in under a minute, so the garlic butter is smooth and evenly green. The oven toasts the bread and melts the cheese, and it is ready in about 25 minutes.

Ingredients
Instructions
- Heat the oven to 200°C (400°F). Cut the loaf in half lengthwise, then cut each half into 4 pieces and set them cut side up on a baking sheet.
- Place the Parmesan in the dry mixing bowl and grate 10 sec/speed 10. Add the garlic and parsley and chop 5 sec/speed 7. Scrape down the sides with the spatula.
- Add the butter, olive oil and salt and mix 20 sec/speed 4, until evenly green. Scrape down the sides and mix 10 sec/speed 4 more if needed.
- Spread the garlic butter over the cut side of the bread, all the way to the edges. Bake 8 minutes, until the edges are golden.
- Cover the bread with the mozzarella and bake 5 to 7 minutes more, until melted. For brown spots on the cheese, broil 1 to 2 minutes, watching closely.
- Sprinkle with a little chopped parsley and serve warm.
Tips
- The garlic butter keeps 1 week in the fridge or 3 months in the freezer. Roll it into a log in plastic wrap and slice off what you need.
- For classic garlic bread without cheese, bake the buttered bread 10 to 12 minutes.
- Serve it with warm marinara for dipping, or next to spaghetti and meatballs.
