Split Pea Soup with Ham
Thick, velvety green split pea soup with diced smoked ham and carrots, finished with cracked black pepper.
Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Split pea soup is a budget classic that tastes like it took all day: dried green split peas simmered until they fall apart into a thick, velvety soup, with cubes of smoky ham and sweet carrot in every spoonful. A bag of split peas costs very little, and they need no soaking.
The Thermomix® TM7™ chops and sautés the onion, celery and garlic, then simmers the peas in broth for about an hour with the simmering basket on the lid, so the soup bubbles without splattering. The ham and carrots go in for the last 20 minutes on reverse, so they keep their shape. Serve it with crusty bread.

Instructions
- Place the onion, celery and garlic in the mixing bowl and chop 5 sec/speed 5. Scrape down the sides, add the oil and sauté 4 min/120°C (250°F)/speed 1.
- Add the split peas, broth, bay leaf, thyme and pepper. Place the simmering basket on the lid instead of the measuring cup and cook 35 min/100°C (212°F)/speed 1.
- Add the carrot and ham and cook 20 min/100°C (212°F)/reverse/speed 1, with the simmering basket on the lid, until the peas are falling apart and the soup is thick.
- Remove the bay leaf. Taste and add salt only if needed, since the ham is salty.
- Ladle into bowls, finish with cracked black pepper and serve with crusty bread.
Tips
- For a smoother soup, lift out the ham and carrots with a slotted spoon after step 3, blend 20 sec/speed 4-8, increasing speed gradually, with the measuring cup in place, then stir them back in.
- Split peas thicken a lot as they cool. Loosen leftovers with broth or water when you reheat them. The soup keeps 4 days in the fridge and 3 months in the freezer.
- For a meatless version, skip the ham, use vegetable broth and add 1/2 tsp smoked paprika in step 2 for the smoky flavor.
