Snowman Cupcakes

Vanilla cupcakes with white buttercream and a stacked marshmallow snowman with pretzel arms and a carrot nose.

By Wanda Oyola 2 h Easy

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Vanilla cupcakes with white buttercream swirls topped with stacked marshmallow snowmen with black dot eyes, orange noses and pretzel arms.

These cheerful snowmen are built from two big marshmallows standing on a swirl of white buttercream, with pretzel stick arms, little black buttons and a tiny orange carrot nose. Even in Florida, where snow only shows up on holiday sweaters, they bring a wintry smile to a Christmas party, a classroom treat day or a hot chocolate night.

The Thermomix® TM7™ mixes the vanilla batter and whips the white buttercream with the butterfly whisk; a spoonful tinted orange becomes the noses. Building the snowmen is the fun part, and kids can do almost all of it: drawing the faces, stacking the marshmallows and adding the arms.

Instructions

  1. Preheat the oven to 180°C (350°F) and line a 12-cup muffin pan with paper liners.
  2. Place the butter and sugar in the mixing bowl and mix 1 min/speed 4. Scrape down the sides, add the eggs and vanilla and mix 30 sec/speed 4.
  3. Add the flour, baking powder, salt and milk and mix 10 sec/speed 4. Scrape down the sides and mix 5 sec/speed 4, just until smooth.
  4. Divide the batter among the liners, about 2/3 full, and bake for 18 to 20 minutes, until golden and a toothpick in the center comes out clean. Cool completely on a rack, about 1 hour.
  5. Wash and dry the mixing bowl. Insert the butterfly whisk, add the butter and whip 2 min/speed 3.5, until pale. Add the powdered sugar, milk, vanilla and salt, put the measuring cup in place and whip 1 min/speed 3, then whip 2 min/speed 3.5, scraping down halfway, until fluffy and white.
  6. Take out 1 tbsp of buttercream, tint it orange and put it into a small zip-top bag. Spoon the rest into a piping bag with a large open star tip and pipe a swirl on each cupcake.
  7. With the marker, draw 2 eyes on 12 marshmallows for the heads and 3 buttons down the side of the other 12 for the bodies.
  8. Stand a body on each swirl, add a dab of buttercream on top and set a head on it. Push a pretzel stick down through both marshmallows into the cupcake to hold them, and push 2 pretzel sticks, broken in half if long, into the sides of the body for arms.
  9. Snip a tiny corner of the orange bag and pipe a small carrot nose on each face, pulling away to a point. Serve, or keep the cupcakes in a closed container in the refrigerator.

Tips

  • The pretzel stick inside keeps the snowmen standing and everything stays edible, with no toothpicks for little ones to find.
  • Draw the faces on dry marshmallows before stacking: the marker glides better and does not smudge.
  • Add a scarf with a thin strip of fruit leather or red licorice lace wrapped around the neck.
  • Florida heat softens buttercream fast. Decorated cupcakes keep 2 days in the refrigerator; take them out 20 minutes before serving.
