Six pastel layers in pink, orange, yellow, green, blue and purple, with vanilla buttercream and rainbow sprinkles.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

A slice of six-layer rainbow cake with pastel pink, orange, yellow, green, blue and purple layers, white frosting, a piped border and rainbow sprinkles.

Cut into this cake and the whole party says wow: six thin layers in pastel pink, orange, yellow, green, blue and purple, stacked with vanilla buttercream and finished with white frosting, a piped border and rainbow sprinkles. It takes some time, but every step is simple, and it is a birthday cake people remember.

The Thermomix® TM7™ mixes one white cake batter made with egg whites, which keeps the colors clean and bright. You weigh it, divide it among six bowls and tint each one with a touch of gel coloring. The thin 6 inch layers bake in about 15 minutes, two or three at a time, and then the TM7 beats the buttercream.

Instructions

  1. Preheat the oven to 180°C (350°F). Grease your 15 cm (6 in) round cake pans, ideally 3, and line the bottoms with parchment paper.
  2. Place the flour, sugar, baking powder and salt in the mixing bowl and mix 10 sec/speed 4. Add the butter and mix 30 sec/speed 4, until it looks like damp sand.
  3. Add the egg whites, milk and vanilla and mix 20 sec/speed 4. Scrape down the sides and mix 10 sec/speed 4, until smooth.
  4. Weigh the batter and divide it evenly among 6 bowls, about 190 g each. Tint each bowl a pastel color with a tiny dab of gel coloring and stir with a spoon until even.
  5. Spread each color in a prepared pan and bake in the oven for 14 to 17 minutes, until the top springs back and a toothpick comes out clean. Bake in rounds if needed, cooling and lining the pans again between rounds. Cool the layers 5 minutes in the pans, then on a rack until completely cool.
  6. Wash and dry the mixing bowl. Place the butter in it and mix 1 min/speed 4. Add the powdered sugar and salt and mix 30 sec/speed 3, then add the cream and vanilla and mix 1 min/speed 4, scraping down halfway.
  7. On a cake stand, stack the layers starting with purple, then blue, green, yellow, orange and pink, with a thin layer of buttercream between each. Spread a thin coat all over and refrigerate 20 minutes.
  8. Cover the cake with most of the remaining buttercream and smooth it. Pipe a border of swirls around the top edge with a star tip and scatter rainbow sprinkles over the top.

Tips

  • Pastel layers need very little gel coloring: start with the tip of a toothpick and add more only if the color looks too pale.
  • If you only have one or two pans, the batter can wait at room temperature while the first layers bake.
  • Bake the layers a day ahead, wrap them well once cool and keep them in the refrigerator; cold, thin layers are much easier to stack.
  • Keep the cake covered in the refrigerator up to 3 days and take it out 1 hour before serving.
