Purple Monster Cupcakes

Vanilla cupcakes covered in shaggy purple buttercream fur, googly candy eyes and rainbow sprinkles.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Vanilla cupcakes covered in shaggy purple buttercream fur with googly candy eyes and colorful sprinkles, with small pumpkins behind.

These fuzzy purple monsters are as much fun to make as to eat. A tender vanilla cupcake gets a coat of shaggy buttercream fur, piped with a grass tip, then as many googly candy eyes as you like and a shower of rainbow sprinkles. No two monsters come out the same, which is half the fun at a Halloween party or a monster birthday.

The Thermomix® TM7™ makes the vanilla batter in two quick mixes, then whips a big batch of buttercream with the butterfly whisk and tints it purple right in the bowl. The fur looks fancy but the move is simple: squeeze, pull up, stop. Set up a decorating station and let the kids add the eyes and sprinkles.

Instructions

  1. Preheat the oven to 180°C (350°F) and line a 12-cup muffin pan with paper liners.
  2. Place the butter and sugar in the mixing bowl and mix 1 min/speed 4. Scrape down the sides, add the eggs and vanilla and mix 30 sec/speed 4.
  3. Add the flour, baking powder, salt and milk and mix 10 sec/speed 4. Scrape down the sides and mix 5 sec/speed 4, just until smooth.
  4. Divide the batter among the liners, about 2/3 full, and bake for 18 to 20 minutes, until golden and a toothpick in the center comes out clean. Cool completely on a rack, about 1 hour.
  5. Wash and dry the mixing bowl. Insert the butterfly whisk, add the butter and whip 2 min/speed 3.5, until pale. Add the powdered sugar, milk, vanilla and salt, put the measuring cup in place and whip 1 min/speed 3, then whip 2 min/speed 3.5, scraping down halfway. Add purple gel color and whip 20 sec/speed 3.5, until evenly purple.
  6. Spoon the buttercream into a piping bag with a grass tip, the kind with many small holes. Hold the bag straight up, just touching the top of a cupcake, squeeze, then pull up about 1 cm (1/2 in), easing off the pressure as you lift. Repeat close together until the whole top is covered in shaggy fur.
  7. Press 3 to 5 candy eyes of different sizes into the fur of each monster, then scatter rainbow sprinkles over the top.
  8. Serve right away, or keep the monsters in a closed container in the refrigerator and take them out 20 minutes before serving.

Tips

  • Grass tips are sold in the cake decorating aisle of craft stores and many supermarkets. No grass tip? Pipe short pulls with a small star tip, or spread the frosting and rough it up with a fork.
  • Purple gel can look pinkish. For a deeper violet, add a tiny dot of blue gel color with the purple.
  • Bake the cupcakes the day before and keep them in an airtight container at room temperature; decorate on party day.
  • Florida heat softens buttercream fast, so keep decorated cupcakes in the refrigerator for up to 3 days.
