One-Pot Creamy Spinach Pasta

Short pasta cooked right in the bowl with garlic, spinach, cream and parmesan. Dinner in about 30 minutes.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Creamy penne with wilted spinach and grated parmesan in a white bowl.

This is the pasta for nights when you want dinner on the table fast and only one bowl to wash. Penne or fusilli cooks right in the broth, so the starch it releases turns into a silky sauce once the cream and parmesan go in. A big handful of spinach wilts in at the end and adds fresh color.

The Thermomix® TM7™ grates the parmesan, chops the garlic and onion, and then cooks everything on reverse at soft speed, stirring gently so the pasta doesn't stick or break. Serve it as it is, or add leftover chicken for a heartier plate.

Ingredients

Instructions

  1. Place the parmesan in the mixing bowl and chop 10 sec/speed 10. Transfer to a small bowl and set aside.
  2. Place the onion and garlic in the mixing bowl, chop 5 sec/speed 5 and scrape down the sides with the spatula.
  3. Add the olive oil and sauté 3 min/120°C (250°F)/speed 1.
  4. Add the pasta, broth, salt, pepper and red pepper flakes, then stir with the spatula so the pasta is covered by the broth.
  5. Place the simmering basket on the mixing bowl lid instead of the measuring cup and cook 14 min/100°C (212°F)/reverse/speed soft.
  6. Add the cream, then the spinach, pressing the leaves down with the spatula, and cook 3 min/100°C (212°F)/reverse/speed soft with the simmering basket on the lid.
  7. Stir in the parmesan with the spatula, let the pasta rest 2 minutes so the sauce thickens, and serve.

Tips

  • Pick a short pasta with a 10 to 12 minute package time. If yours says 13 minutes or more, add 2 minutes in step 5.
  • Frozen spinach works too: use 150 g (2/3 cup) thawed and squeezed dry, added in step 6.
  • For a heartier dinner, add 200 g (1 1/2 cups) of cooked, shredded chicken with the cream in step 6.
  • Leftovers keep 3 days in the fridge. The pasta keeps absorbing the sauce, so reheat it with a splash of broth or milk.
