Guacamole in a stone molcajete topped with diced tomato, onion and cilantro, with tortilla chips, a lime wedge and a jalapeño.

Guacamole goes back to the Aztecs, whose name for it, ahuacamolli, simply means avocado sauce. The classic is simple: ripe avocados, white onion, chile, cilantro, lime and salt, mashed in a stone molcajete so it stays a little chunky. Served with tortilla chips, it disappears from the table faster than anything else at a party.

The Thermomix® TM7™ chops the onion, jalapeño and cilantro finely in seconds, then mashes the avocados on reverse, which keeps some texture instead of turning them into a puree. A spoonful of diced tomato, onion and cilantro on top gives it the look of a taquería bowl. Make it right before serving so it stays bright green.

Instructions

  1. Place the onion, jalapeño and cilantro in the mixing bowl and chop 3 sec/speed 5. Scrape down the sides with the spatula.
  2. Add the avocado, lime juice and salt and mix 6 sec/reverse/speed 4, until mashed but still a little chunky. For a smoother guacamole, mix 4 sec/reverse/speed 4 more.
  3. Taste and add more lime juice or salt if needed, stirring it in with the spatula.
  4. Transfer to a molcajete or serving bowl and top with the diced tomato, onion and cilantro.
  5. Serve right away with tortilla chips and lime wedges.

Tips

  • A ripe avocado gives a little when you press it, and the small stem cap comes off easily, green underneath. Hard ones ripen in 2 or 3 days on the counter, faster in a paper bag with a banana.
  • Use Hass avocados: the large Florida and Caribbean avocados hold more water and make a looser, less creamy guacamole.
  • To store, press plastic wrap right onto the surface and refrigerate for up to 1 day. If the top darkens, scrape off that thin layer and stir.
  • Mild for kids: leave out the jalapeño and serve it chopped on the side for the grown ups.
