Deviled Eggs
Party classic: steamed eggs with a silky, tangy yolk filling piped in swirls, topped with paprika and chives.
Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Deviled eggs are on the table at almost every American cookout, potluck and holiday party, and they always disappear first. The filling is simple: egg yolks, mayonnaise, a little mustard and a splash of vinegar, piped back into the whites and finished with a dusting of paprika and some chives.
The Thermomix® TM7™ steams a full dozen eggs in the Varoma, and steamed eggs tend to peel more easily than boiled ones. Then the yolks go into the mixing bowl and blend into a filling so smooth you can pipe it with a star tip, like the ones in the photo.

Instructions
- Pour the water into the mixing bowl. Place the eggs in the Varoma dish, put the Varoma in position with its lid and steam 18 min/Varoma/speed 1.
- Meanwhile, fill a large bowl with ice and water. Move the eggs into the ice bath right away and leave them 10 minutes, then peel them under cool running water.
- Empty and dry the mixing bowl. Cut the eggs in half lengthwise, drop the yolks into the mixing bowl and set the whites on a platter.
- Add the mayonnaise, mustard, vinegar, salt and pepper and blend 20 sec/speed 5. Scrape down the sides with the spatula and blend 10 sec/speed 5 more, until very smooth.
- Spoon the filling into a piping bag with a large star tip, or a zip-top bag with one corner snipped off, and pipe it into the egg whites.
- Sprinkle with paprika and chives and keep in the refrigerator until serving.
Tips
- Cut one egg open after the ice bath: the yolk should be fully set and pale yellow. If it is still soft in the center, steam the next batch 2 minutes longer.
- Eggs that are about a week old peel more easily than very fresh ones.
- Make ahead: keep the whites and the filling separately, covered, in the fridge for up to 1 day, and pipe them a couple of hours before the party. At an outdoor party, set the platter over ice and don't leave them out more than 2 hours.
