Caprese Skewers

Cherry tomatoes, fresh mozzarella and basil on little skewers, drizzled with a homemade balsamic glaze.

Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Small skewers of cherry tomatoes, fresh mozzarella and basil drizzled with dark balsamic glaze, lined up on a white platter.

Caprese skewers take the classic salad from Capri, ripe tomatoes, fresh mozzarella and basil, and turn it into a two-bite party snack. They are fresh and colorful, need no oven, and fit on any table next to heavier dips and meatballs. The dark, sweet balsamic glaze on top is what makes them special.

Bottled glaze is handy, but the Thermomix® TM7™ makes your own from plain balsamic vinegar and a little brown sugar: it simmers with the simmering basket on the lid so the steam escapes, until it turns syrupy. While the glaze cools, you thread the skewers.

Instructions

  1. Place the balsamic vinegar and brown sugar in the mixing bowl. Place the simmering basket on the lid instead of the measuring cup and cook 18 min/Varoma/speed 2.
  2. Check the glaze: it should coat the back of a spoon, and it will thicken more as it cools. If it is still thin, cook 3 min/Varoma/speed 2 more. Pour it into a small jar and let it cool completely.
  3. Thread each skewer with a tomato, a basil leaf, a mozzarella ball, another basil leaf and a second tomato.
  4. Line the skewers up on a platter, drizzle with olive oil and sprinkle with flaky salt and pepper.
  5. Just before serving, drizzle the cooled balsamic glaze over the top.

Tips

  • Open a window or turn on the hood fan while the vinegar reduces: the steam is strong. If the cold glaze gets too thick, warm the jar in hot water for a minute.
  • The glaze makes more than you need. It keeps 1 month in a closed jar in the fridge and is great on salads, strawberries and grilled chicken.
  • Make ahead: thread the skewers up to 4 hours ahead, cover and refrigerate. Add the oil, salt and glaze right before serving so the basil stays bright.
