Recipe in testing: I'm cooking it in my TM7™ and will update the steps and the photo with my own.

Mini soft rolls filled with a creamy pink ham spread, lined up on a round platter.

No Cuban birthday party, baby shower or quinceañera is complete without a tray of bocaditos: little soft rolls, slightly sweet, filled with pasta de bocadito, a creamy pink spread of ham, cream cheese and pimientos with a touch of sweet relish. They are small enough to eat in two bites and easy to make by the dozen.

The Thermomix® TM7™ turns the onion, ham, cream cheese and pimientos into a smooth spread in under a minute, with no food processor to wash. A short rest in the fridge firms it up, and then all that is left is filling the rolls and covering the tray so the bread stays soft.

Instructions

  1. Place the onion in the mixing bowl, chop 3 sec/speed 7 and scrape down the sides with the spatula.
  2. Add the ham, chop 10 sec/speed 7 and scrape down the sides again.
  3. Add the cream cheese, mayonnaise, pimientos and relish and blend 20 sec/speed 5. Scrape down, then blend 10 sec/speed 6 more, until smooth and evenly pink. If it is too thick to spread, add 1 tbsp of the pimiento liquid and mix 5 sec/speed 4.
  4. Transfer the spread to a container, cover it and refrigerate for at least 30 minutes, so it firms up and the flavors come together.
  5. Spread about 2 tbsp (30 g) of the ham spread on the bottom half of each roll and cover with the top half.
  6. Arrange the bocaditos on a platter, cover them with plastic wrap or a barely damp kitchen towel so the bread stays soft, and keep them in the fridge until serving.

Tips

  • Make the spread up to 3 days ahead and keep it covered in the fridge. Fill the rolls on the day of the party.
  • Food safety: keep the tray out no more than 2 hours, or 1 hour outdoors on a hot Florida day. For an outdoor party, set the platter over a tray of ice.
  • Feeding a crowd? Make the spread twice instead of doubling it, so the blades can blend it smooth.
  • Leftover spread is delicious on crackers or celery sticks.
